I am not one to suggest that everyone needs to eat 100% raw. Actually, I think that we as a society are best to try to step out of that yo-yo diet, “all or nothing” mentality. This personally has been a challenge for myself but over the years has become easier. I feel that when it comes to raw foods, “more is better” and adding any amount is beneficial. Some people are shocked when I explain that I am not 100% raw. I strive for about 80% raw and that amount works well for me. I think it is very important that we listen to our bodies. Different things for different people at different times, is what I say. I have gone through periods where I have felt the need to eat 100 % raw, and have done so. Many people find this helpful when up against a health crisis or just feeling run down or over worked and tired. People ask, “What if I eat 50% raw and the other 50% very clean, like brown rice, steamed vegetables and occasional wild piece of salmon”? I say that is fantastic. You’re certainly going to be a lot better off than someone who is eating the Standard American Diet (S.A.D.) 24/7. Change takes time. It has taken me years to get to where I feel like I am really feeding my body the healthiest foods most of the time. Celtic sea salt&lt;br&gt;1/2 cup fresh squeezed lemon juice&lt;br&gt;1/4 cup olive oil&lt;br&gt;Destem and chiffonade (finely shred) your kale. Next, massage kale with salt and olive oil for 2-5 minutes. I always suggest the 3 S's for a couple of reasons. First, they are super easy to prepare...all you need is a knife and a blender. Next, they are probably the healthiest raw foods you can eat. Your blender will masticate soups and smoothies better than you could with your teeth, no matter how well you chew. When blending, all the fibers of the food are completely broken down before consuming, making all of the nutrition totally bio-available to the body with little digestion required, leaving you feeling energetic and light. Salads; pick up a tub of organic pre-washed mixed greens and stick them in your fridge for easy access. Chop and shred your favorite veggies and place them in a long tupperware -these will last about 7 days in the fridge and are perfect for quick salad assembly. A simple raw dressing (and probably my favorite) is lemon, olive oil, salt and pepper. Voila! Eating healthy and raw is really not that difficult. If you don't prefer to live on the 3 S's and like your heartier gourmet food, leave that up to us!
