What percentage of raw is suggested?

This is a very popular question. I am not one to suggest that everyone needs to eat 100% raw. Actually, I think that we as a society are best to try to step out of that yo-yo diet, “all or nothing” mentality. This personally has been a challenge for myself but over the years has become easier. I feel that when it comes to raw foods, “more is better” and adding any amount is beneficial. Some people are shocked when I explain that I am not 100% raw.

Kale Winter Salad

Raw Recipe #7
I've recently taken on my own 28 day salad challenge....replace one meal with one large raw salad each day- for an entire month. Do it- This will change your life! Get creative with your combinations and stay tuned for more yummy salad inventions!

Kale Winter Salad
2 bunches curly green kale
...1 cup dried cranberries
1 cup chopped pecans
1 cup roma tomatoes, julliened
1/2 t. Celtic sea salt
1/2 cup fresh squeezed lemon juice
1/4 cup olive oil
Destem and chiffonade (finely shred) your kale. Next, massage kale with salt and olive oil for 2-5 minutes.

The 3 S's - Smoothies, Soups and Salads!
Many of my clients ask about what foods they should eat on the 2-3 days days they are not eating our food. I always suggest the 3 S's for a couple of reasons. First, they are super easy to prepare...all you need is a knife and a blender. Next, they are probably the healthiest raw foods you can eat. Your blender will masticate soups and smoothies better than you could with your teeth, no matter how well you chew. When blending, all the fibers of the food are completely broken down before consuming, making all of the nutrition totally bio-available to the body with little digestion required, leaving you feeling energetic and light.
